Sushi, a Japanese superfood and synonym of Japanese culture

In Japan, sushi boasts a history and culture of more than 1,000 years. Sushi originated in Southeast Asia as a fermented food called "nare-zushi".

In the 8th century, "matured sushi" was created from fermented rice and fish.

And in the late 17th century, instead of waiting for the rice to ferment, a method was developed in which vinegar was added to the rice.

It was during the Edo period in the late 17th century that sushi approached its current style.

The first "fast sushi," which did not require fermentation, was created by adding vinegar to the rice instead of waiting for the rice to ferment.

This became the more refined and world-renowned style of sushi today.

The most popular type of sushi today is "Nigiri-zushi", also called "Edomae-zushi".

Edomae means "the sea before Edo (the old name for Tokyo)" or "Edo style".

Sushi is a Japanese superfood and now synonymous with Japanese culture.

In most cities around the world, it has become part of the street scene and represents the highest art and aesthetics of Japanese cuisine.

Kamakura Kohana Sushi, a long-established, well-known restaurant loved by local celebrities and neighborhood residents, and also loved by the great actresses of the Showa period

Getting off at Enoden's Yuigahama Station and walking through a quiet residential area toward the Kamakura Museum of Literature, you will come to the slightly wider Yuigahama Street, which long ago was the "Tokaido," Japan's main roadway connecting Edo and Kyoto.

And on the left corner of the mountain side of the crossing marked "Entrance to the Museum of Literature" stands "Kamakura Kohana Sushi," a long-established restaurant that has been in business for 50 years.

Kamakura Kohana Sushi is a sushi restaurant loved by the great actress who took Japan by storm during the latter part of the Showa period (1926-1989) .

Even if she was already famous as one of the greatest actresses of the Showa era, she can always return to her true self, as if she was returning to another home.

The anecdote about how the chef of Kohana Sushi was called "Father" and the proprietress "Mother" conveys the gentle and warm atmosphere of the restaurant, which goes beyond the pure deliciousness of the sushi.

As this famous story confirms, Kamakura Kohana Sushi has long been a favorite of celebrities and locals in the neighborhood, who are attracted by the delicious sushi using local ingredients and seasonal fish that only Kamakura can offer, as well as the comfortable time that flows through the restaurant.

Experience "real" Edomae (Edo style) Sushi at the counter with "Omakase" ( Leave it to the chef )

Passing through the elegant noren (curtain), you will see a white polished counter made of precious knotless hinoki cypress, which is over three feet long.

The sight of the master and the young chef, who are instantly recognizable as father and son, standing side by side, deftly and skillfully preparing the fish behind the counter, is a very pleasant sight to behold.

Not only the knotless counter, but also the interior decorations such as walls and fusuma sliding doors using handmade Japanese paper coated with persimmon tannin, decorated with "Koyori (papers twisted into a string) , are all handmade to order, using traditional techniques.

Every part of the restaurant is aesthetically pleasing, as Kamakura Kohana Sushi has always valued traditional Japanese techniques and the beauty of orthodox and traditional Japan.

In the counter's now-precious traditional "Neta case" (display case), fresh and abundant local fish, including locally caught whitefish (greater amberjack, flatfish, Japanese sea perch), horse mackerel, mackerel, octopus, etc., will stimulate your appetite.

Local products such as raw shirasu (fresh whitebait) which Kohana Sushi invented as sushi ingredients, and horse mackerel, bonito, etc., are all outstandingly fresh.

After all, truly fresh food is delicious, and it reaffirms the fact that freshness is the most important thing.

You will enjoy a "real" Edomae (Edo style) Sushi experience, where you will taste delicious sushi made with the freshest and abundant seasonal ingredients, completely "Omakase" (leave it to the chef) at the counter .

And you will be moved to your heart's content by the craftsmanship of the chefs, as they prepare it right in front of you, while conversing with the master across the counter in a warm family-like atmosphere, which you can experience only at the counter.

Seasonal ingredients and a friendly and pleasant conversation with the chefs.

Please enjoy this special once-in-a-lifetime experience.
